Lentil, Beetroot and Fennel Salad
 
This beautifully textural roast vegetable salad from Sarah Tuck is topped with a delicious herby dressing and chunks of mozzarella.

Not only rich, silky and totally moreish, we decided to gild the lily by topping these puddings with vanilla bean ice cream and chocolate fudge sauce.
