Hot nights, cool days with Julie Biuso

Hot Nights, Cool Days Wherever you are on the planet, you are most likely experiencing one of the above. If you live in the northern hemisphere, you might enjoy turning your hand to Ilaria’s broad bean and pea salad. It’s light, fresh and tasty, but you can make it more substantial by adding poached eggs. Here in New Zealand we are making our way through winter and facing the usual challenge of coming up with tempting ways to use plentiful and inexpensive vegetables week after week. I’ve gone out on a limb with broccoli this time, and roped in a heap of assertive flavours. Roasted Broccoli with Mozzarella & Sultanas I’ve roasted it for a start, then finished it with chillies, garlic, red wine vinegar and anchovies, oh, and added some pine nuts for good measure. The best bit, though, is melting blobs of mozzarella. Ah, those Sicilians!
