Kelly Gibney's spring salad

19, September

After huddling up to comfort food over the past few months, preparing Kelly Gibney's spring salad utterly brightened my mood, as did seeing the cover of our sping issue, which is in stores on Monday. The weather's still a little temperamental though - the perfect excuse for Sarah Tuck's kedgeree inspired Pappardelle and the chewiest, gooiest chocolate cookies from Food Editor Claire Aldous.
RECIPE

Dark Chocolate Mexican Spice Cookies (gf)

These super simple, thin and crispy yet chewy cookies are divine. Leave plain or top with a few chopped nuts or cranberries before cooking.
